Soto

Have you ever heard of Soto? Soto is an Indonesian soup that is composed mainly of broth, meat, and vegetables. Soto itself has a lot of variation depending on the region of origin.

As a national heritage, soto has a long history. Soto is said to have emerged in the 19th Century especially in Java. Some journals suggest that the term soto may have originated from “chau du” which is a chinese cuisine.

To make soto, there are some ingredients and steps to consider. For example, the meat that is used. Some people used chicken, but others may use beef. Soto also has other ingredients like sohun, bean sprout, and scallion. As an Indonesian dish, there are a lot of spices, including shallots, garlic, turmeric, and so much more.

Soto is usually served with rice, half boiled egg, and segments of lime on the side. But, you can also add fried tofu or tempeh. Some people might add a perkedel as a side dish.

As previously stated, soto has a variety of  variants. It is said to have 75 different varieties. Out of the 75 variants, about 61 of them originated in Java. For example Soto Lamongan, Soto Betawi, Soto Kudus originated in Java. While most variants are located in Java, but some soto actually came from the other side of Indonesia even other countries too such as Soto Ambon, Soto Medan, and so much more.

Each variants has ch type of soto has its distinct characteristics. For instances, Soto Betawi which used coconut cream to make the soup more creamy. That’s why Soto Betawi soup looks white. Another way to spot the difference is by examining the ingredients. For example, Soto Lamongan (East Java) utilizes koya topping which gives a savory and umami crunch.

However, nowadays, a lot of young people don’t like soto. The main reason is since now there are many western foods, such as burgers, pizzas, and many more. As young people, we should preserve our own culture. How? By learning to appreciate our own cuisines such as soto.
